Killer Granola
Adapted from Café Marquesa’s Granola.
I save $ by getting the honey, rolled oats, almonds and sunflower seeds from Winco’s bulk section. If you are going to double or triple the recipe, it’s best to bake in 2 to 4 pans. Otherwise, it takes too long and doesn’t toast as evenly.

  Ingredients:

  6-cups rolled oats, (old fashioned)
  2 to 4 cups chopped almonds
  1 ½ to 2 cups sunflower seeds
  1 cup coconut (optional)
 Syrup:
  ¾ cup vegetable oil or safflower oil
  ¾ cup honey
  ¾ cup maple syrup (pure or cheap stuff)
  ¼  cup brown sugar
  1 ½ T. vanilla
  ¾ t. almond extract
  2 t. cinnamon
  Pinch salt


  1.   Put the oats, chopped almonds and sunflower seeds in a large bowl.
  2.   Combine the syrup ingredients in a saucepan and heat over medium-high until mixture appears watery, about 5-minutes or so. I let it gently boil for 30 seconds. Pour the mixture over the oat mixture. Stir until oats are well coated. Be thorough about it. You don’t want any dry oats.
  3.   Spray a large baking pan, or roasting pan with Pam. Pour mixture inside. Bake in the middle of a preheated 325’ oven for 30 to 50-minutes, or until granola turns golden. Stir every 15-minutes, so mixture toasts evenly. If you’ve divided the mixture between pans, keep an eye on ‘em as it’ll turn golden brown quicker.
  4.   Cool completely. I store in Mason jars. Keep in the fridge for a super long life. It stores fine on the counter too.
  5.   Right before serving, add raisins, fresh walnuts, cranberries . . . over the top. I like sprinkling granola over my morning cereal. It’s pretty caloric, but, good for you!
